Hey Dave,
I can try to help you, however, there are to many unknowns in your
situation to understand what to recommend in your case.
I would start with what linux Distribution you are using in your setup.
Also, it's important to understand if you are using a VM or a container.
Another aspect is, what is your actual use case?
What do you mean by POS? Point Of Sale?
Did you self compiled Squid or used a packaged version?
What is your "squid -v" output?
>From my experience I can recommend on a specific distribution for specific
use cases.
These days I can say that it's very easy to use RedHat based OS ie Rocky or
Alma, however, it's much easier to install Alpine linux (currently 3.23)
and on top of it squid.
For most use cases and for most ease of management I am recommending RedHat
based and not Debian based.

however, for a more advanced Linux admins Alpine would be pretty easy to
handle for specific tasks.
